About the Name of “KAMUKURA”

Our polices about the taste

I am taking responsibility of keeping the flavor of KAMUKURA, especially the flavor of “Oishi Ramen” when it was born 30 years ago.
In KAMUKURA we have the system of “Soup Sommelier”, in which only those who have been certificated as a “Soup Sommelier” are qualified to cook the soup. I am, the examiner of this system. Also, I make directions on new dishes and when there are new branches. I am the guard of KAMUKURA`s flavor, and I am proud of this job.

In order to constantly make the best bowl of our original Oishi Ramen, we have created this system of “ Soup Sommelier”.
Only those who have passed the tests and have been recognized as “Soup Sommelier” are surpposed to make soup.

“Soup with an EYE” is the KEY for “Soup Sommelier”

A qualified Soup Sommelier is supposed to make soup with high level, which is called “Soup with an EYE”.
The system of “Soup Sommelier” comes from the system of sommelier, and it has been the soul system of KAMUKURA.

Controling the Quality

We control the quality of soup by balancing various delicate flavor of ingredients.
This process, is also operated by our Soup Sommeliers.

The Soup Sommelier Test

The Soup Sommelier Test consists of two parts: the pritical part and the writing part.
From the using of heat, to the skill of seasoning; from the contents of ingredients, to one`s manner as a member of KAMUKURA, strict examinations are held every year.

The Final Exam is from the Guard of KAMUKURA`s Flavor

The Guard of KAMUKURA`s Flavor will make final directions, concerning that the taste may differ when the cooking situations change.
Only those who pass these various test are qualified to make our “Oishi Ramen” for customers.

After having experienced cooking in famous Chinese restaurants in Hong Kong, Taiwan and mainland China, he came to Japan and became one of the member of KAMUKURA, taking on the part of dum sum. Now Lai has become the head chef in the field of dum sum in KAMUKURA, taking favor of his cooking skills as a pro.

I am the director of Centural Factory, which takes care of the procurement, production and delivery for all the branches of KAMUKURA. The centural factory is the essential part of keeping KAMUKURA`s flavor, and it also works to make developments on food procurement and delivery, on the condition that making coorparation with food companies and producers from local farmers.
The operation of centural factory means the healthy development of the KAMUKURA group.
